It’s the first of the month, guys! And if you remember from last month’s post, that means it is time for another installment of our Friends First series! For those of you just joining us, Friends First is a new series meant to introduce all of you to some of my favorite blogging friends.

Stef is not just one of my dearest friends on the web – she’s also one of my dearest friends in real life (though she’ll tell you more about how that came to be in a moment). Stef is a native to the Chicago area, former vegetarian (who saw the light…and that light was bacon…), mom to pug Weezer, and my sounding board for all things life, love, and blogging. Lemon Curd

Consider this “Mother’s Day Dessert Week” here on EYHO. I know that a lot of times the focus gets put on brunch for Mother’s Day, but I think by now you may have figured out that my family has a tendency to shift our focus to dessert more than anything else. And so this week I have a couple of beautiful desserts for you to pick from when looking to show Mom how much you love her this weekend.

While this lemon curd is a component of a dessert that we will be completing later this week, it’s getting its own post because it is a recipe that you can use in about a million different ways. Use it as a filling for a cake (or cupcakes). Spread it on slices of pound cake. Serve it with fresh berries. Whisk it into a salad dressing. Spoon. Jar. Mouth. Repeat. Once you know how to make lemon curd, the possibilities are limitless.

After every holiday, I feel like I need a day or two to recover.

Certainly this has nothing to do with the fact that my mother and I prepared 8 pounds of lamb and a 13×9-inch pan of sweet potato gratin {recipe coming soon} – plus rolls, asparagus, and dessert – for 3 people this past weekend.

Nope, I’m sure that has nothing to do with it.

My family can really put away a lot of food.

One of my favorite post-holiday recovery tools is a good ol’ smoothie. A few handfuls of fruit, a splash of juice or milk – heck, you can even add some spinach for an extra nutritional punch – and you’ve got yourself a great breakfast, lunch accompaniment, or post-workout snack. They’re quick, easy, and can be changed up a million different ways.

Apple Dumplings

When I get a recipe in my head, there’s no resting until I make it happen.

These apple dumplings came about in exactly that way: I found myself, somewhat out of the blue, with a craving for apple dumplings. And to top it off, I just knew I could do better than using canned biscuit dough or questionable soda in making them.

You’ve probably already guessed where this is going: I had to drop everything and make these dumplings a reality. Are they better than any recipe using canned biscuits and soda? You bet. Are they still just as easy? Absolutely.

These gorgeous dumplings will make a fantastic dessert (or even brunch item!) for your family this Easter.
