Easy Apple and Pear Crumble

Sorry, kidlets, but it is that time of year again: back to school.

That sound you just heard was a thousand students and teachers simultaneously groaning in agony at that thought. 

Personally, I was the nerd that always kind of enjoyed going back to school and getting into a routine again. This is not to say that I enjoyed getting back to homework and exams – I just really enjoy learning. If I were the type to hashtag in normal writing, there would be a “nerd alert” hashtag going on right about now…

Apple-Pear Crumble bite

Easy Apple and Pear Crumbles

Servings4 8-ounce ramekins

Ingredients
  

  • 1 large apple peeled, cored and diced
  • 1 large pear cored and diced
  • 1 tablespoon brown sugar
  • 1 tablespoon granulated sugar
  • 2 tablespoons flour
  • 1 teaspoon cinnamon
  • 1 4.4- ounce package Walkers Mini Crunchy Oatmeal Cookies
  • 2 tablespoons melted coconut oil

Instructions
 

  • Preheat oven to 375 degrees. Lightly grease 4 8-ounce ramekins; set aside.
  • Place diced apples and pears in a medium bowl. In a small bowl, combine the sugars, flour, and cinnamon. Toss with the diced fruit to thoroughly coat. Set aside.
  • Place the cookies in a zip-top bag; close and crush with a rolling pin. You want mostly crumbs with a few pieces of cookie left intact. Place in a small bowl and stir with the coconut oil to combine.
  • Spoon the fruit mixture into the ramekins and spoon the cookie mixture on top. Place ramekins on a baking sheet and bake for 35-40 minutes, until fruit is cooked and bubbly, covering with foil after 15 minutes to prevent from browning too much. Allow to cool before serving.

  2. If I buy two and get one free, that means I can make 3 batches of your apple and pear crumbles (like that arithmetic?? hmmm??) These things look amazing! And your momma mentioned something about your peach ice cream….which would be fantaaaaastic on top….??? UGH, we need to hang out!

    1. OHHHH girl. Aren’t mornings the worst?? Just hope your kidlets are never involved in activities that require morning practices/rehearsals. I was a choir/theatre kid and had 7:30 am rehearsals most days of the week for huge chunks of the year. Maybe if you made these right after everyone left the house, you could eat them all before anyone got home and no one would notice 😉

  3. “I just loved learning” alright miss smarty pants! Hahaha! Mike has been back at school all week now and surprisingly isn’t in that bad of a mood. I’ll give it another week before the reality really sets in. This crumble is so easy and reminds me of one of my favorite cinnamon apple desserts as a kid. I am so with Julia on this one. I need some ice cream over this ASAP!

  4. I can just imagine these all warm and crumbly. It’s enough to make my mouth water. I have the cutest little dishes to make them in, too. 🙂 I feel like there should be some clever apple crumble for the teacher joke inserted here. Anyway, I do love fall with cool weather and fall wardrobe and whatnot. And honestly, there’s still a part of me that gets excited for new school supplies, even though I don’t buy or need them… 😉

  5. I can hardly wait to try your recipe Steph. Your mom suggested I register to win a bag of cookies by answering the question, What do I like about fall? The answer use to be the changing of the leaves and the smell of a camp fire. Since moving to South Texas I suppose the answer would be, a drive up into Hill Country to visit the wineries and visit the shops. With temperatures in double digits instead of triple digits makes visiting these small towns a lot more fun.

  6. What I like about this time of year is; cooler evenings but still pleasant enough to be outside, local high school football games and Caramel apples.
